Peanut butter cookies

1/2 c granulated sugar
1/2 c brown sugar
1/4 c peanut butter
1/4 c peanut butter powder
1/2 c butter
1 egg and 1 egg yolk
1 tsp vanilla
1 1/4 c flour
3/4 tsp baking soda
1/2 tsp salt
1 tablespoon corn starch ( this is not optional it gives the cookies the soft center and the slightly crunchy outer shell)
1 or 1/2 of a bag of peanut butter chips depending on how “chip filled” you prefer
(At the reunion I used 1/2 a bag per recipe because I was trying to 4 Xs the recipe to make a lot so I stretched the chips further) also if you want more crunch add some chopped peanuts

Heat the oven to 375.
Beat the sugars and butter together until light and fluffy, add the peanut butter and egg and vanilla, combine until well mixed.
Combine the dry ingredients, including the peanut butter powder, together and then sift into wet ingredients.
Mix together in a larger bowl and before all the flour gets incorporated add the peanut butter chips.
If the dough feels a little too dry add a tablespoon or two of milk.
Roll the cookies in white sugar before placing on tray to cook, bake for 8-10 minutes and then leave on the tray for two minutes before taking them off to cool on a rack.
