Palacsintas

2 cups milk
1/2 cup water
3 eggs
2 cups flour
1 tsp vanilla
1 tsp salt

Blend everything besides flour until thoroughly mixed. Add flour and blend slowly till integrated. Milk and water can be replaced with 2 1/2 cups of almond milk or rice milk. Make sure the pan is very hot (medium high). Place a small amount of butter in heated pan. When melted, pour batter in the center of the melted butter and tilt pan till the batter has a thin layer covering the pan. When the edges start to brown, flip the palacsinta. The second side will cook very quickly. Remove palacsinta to plate and repeat.
