This easy microwave recipe works for a variety of fruits – plum, peach, etc. – though our favorite is definitely apple.
Filling
6 cups sliced fruit
1/2 cup sugar
2 Tbsp flour
1/2 tsp cinnamon
1 Tbsp butter
1 Tbsp lemon juice
Topping
1/2 cup AP flour
1/2 cup quick oats
2/3 cup brown sugar
1/2 tsp cinnamon
1/3 cup butter
In a 2 quart casserole, combine the first 6 ingredients and arrange evenly in the bottom of the dish. In another bowl, toss together all the topping ingredients, cutting in the butter until the mixture is quite crumbly. Sprinkle topping over the fruit. Cook in microwave, uncovered, on high power 10-13 minutes or until the fruit is tender. Serve warm with whipped cream or ice cream.
Yield: 6-10 servings
