Ruth Turner is a dear family friend of our Packards in Culver City. After Grandma Packard passed away in the summer of 2013, Ruth showed up at Grandpa Packard’s house on the day before Grandma’s funeral with loads of delicious food for all of us weary travelers and caretakers. One of her offerings was a hearty chicken pot pie, which we loved so much that we asked her for the recipe.
Here is what she wrote in response:
“I want to thank you all for your kind words, I went to visit David and Debbie on Saturday and took them some Pumpkin soup and scones and picked up my pie dishes and saw your note that you wanted the recipe.
I use the Pillsbury Chicken Pot Pie Recipe and follow it exactly as it says with the one exception, I always buy a roasted chicken from Costco bring it home and remove all the meat while the chicken is still hot, I have found that I can remove it easily when I do this. I can make 2 pot pies from one chicken.
Be sure that while you are baking it that you cover the crust edges with either aluminum foil or if you have a cover for half the baking time so that it does not burn. Let the pie sit for at least 45 mins so that it sets up before cutting otherwise the gravy runs all over. Enjoy!!”
