Samoan Style Pancakes

These pancakes are favorites at ward breakfasts and Polynesian family gatherings in Laie

2 cup flour

2/3 cup sugar

water

butter

1 mashed banana (optional)

 

Mix together the flour and sugar. Add enough water to make a thin batter, same thickness as for crepes. Stir in mashed banana if desired. Generously butter a hot griddle. Pour out circles 4-5 inches in diameter on the hot griddle. Brown pancakes on both sides, turning once. Tasty plain, or you can spread them with jam and roll up to eat.

Variation: Hawaiian Style Pancakes – increase sugar to 2+ cups. These get crispy on the edges and are very sweet, like a cookie.
