Mom’s Mayonnaise


1 egg
1/2 tsp each salt, sugar & dry mustard
2 tbl lemon balsamic vinegar
1 Tbl olive oil
1 1/4 c soy oil (or other oil of your choice)

Put egg, spices, balsamic & 1 Tbl olive oil in container & process with metal blade for 1 minute. While machine is running, drip 1/4 c of the soy oil in slowly (deciding term here is “drip”). While machine continues to run slowly add remaining oil in a steady small stream. May will thicken as oil is added. And, voila! you have mayo (about 1 1/2 cups)
