Not quite as good as the ones Auntie Carol made us, but they sure make the kitchen smell like Christmas! Makes 12 tarts.
Crust:
- 1 c flour
- 1/4 tsp salt
- 6 tbsp cold butter
- 1 egg yolk
- 2 tbsp water
Cut the butter into small pieces and rub it into the flour with fingers or a wooden spoon. Whisk the water and egg yolk together, then stir into the flour mixture until a soft dough forms. Cover tightly and refrigerate for 20 minutes. Divide dough into 12 pieces and press each one in the bottom and half-way up the sides of the cups in a muffin tin. Prick the bottom of each shell with a fork. Bake 12 minutes at 425 degrees F, or until lightly browned.
Filling:
- 1 large granny smith or other tart apple, peeled and chopped
- 1/3 c chopped raisins
- 1/8 of an orange, with rind, chopped fine
- 1/8 of a lemon, with rind, chopped fine
- 2 tbsp apple cider vinegar
Cover and gently simmer the chopped fruits and the vinegar together for 15 minutes. Then add:
- 1/3 c brown sugar
- 1/8 tsp salt
- 1/8 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp cloves
Cover and continue to simmer for about 45 minutes, then remove lid and cook until thickened. Cool. Spoon into cooked tart shells. Serve with whipped cream if desired.
