Friday Night Pizza Dough

Rachel has created a family tradition of having homemade pizza every Friday night. You might wonder – Wouldn’t they get sick of it? Not with a fantastic crust and Rachel’s incredible creativity when it comes to toppings. Try these recipes out and your family may want to make a tradition of Friday Night Pizza, too!

Dough

2 c starter
1 1/2 c bread flour
1/2 c whole wheat (or use all bread flour and omit gluten)
1 tsp gluten
1 Tbsp sugar
3 Tbsp olive oil
2 Tbsp honey
scant 1 Tbsp kosher salt
1-2 Tbsp dry milk (optional to relax the dough)

Knead all together with a dough mixer for 10-15 minutes, until sides clean and dough is soft but tacky, not moist. Rise 1 hour, punch down and rise again 20-30 minutes. Divide in half and shape into crusts. Rest 30 minutes before topping. Bake on a preheated pizza stone at 400 degrees F for 10 minutes. Optionally, you can broil the pizza for the last 1 1/2 minutes of the bake time to brown up the cheese a little.
