Sunday Coffee Cake

…sans the coffee, of course 🙂

Cake

1 1/2 c flour
3/4 c sugar
2 1/2 tsp baking powder
3/4 tsp salt
1/4 c shortening
3/4 c milk
1 egg

Streusel

1/2 c brown sug
2 tsp cinnamon
1/2 c finely chopped nuts
2 Tbsp melted butter

Pre-heat oven to 375 degrees F. Grease an 8×8″ pan (or, if doubling the recipe, a 9×13″ pan). Blend all batter ingredients and beat vigorously for 30 seconds. Spread 1/2 of the batter in prepared pan. Mix streusel ingredients and spread half over batter. Pour on remaining batter, then sprinkle with remaining streusel. Bake for 25-30 minutes for 8×8′ pan, or for 40-45 minutes for the 9×13″ pan.

Time to make: 45-60 minutes
