Grandma Packard’s Waffles

5 eggs, separated
5 Tbsp sugar
2 cups milk
1 tsp vanilla
2 3/4 cups flour
5 tsp baking powder
1/2 tsp salt
1/4 cup melted butter
1 Tbsp olive oil

Pre-heat waffle iron. Combine flour, baking powder, and salt and set aside. Beat yolks and sugar, then mix in milk and vanilla. Add dry ingredients slowly. Add oil & butter. Beat egg whites until stiff, then gently fold into batter. Dish into waffle maker and cook until golden brown.

Grandma Packard usually served these with her “Brown Syrup” or Kathy’s “Jello Syrup.”
