Sweet Potato Casserole

Deb and her family are very involved in Civil War re-enactments, and this recipe was discovered when she was asked to do a sweet potato dish that would be period accurate for a re-enactment holiday dinner. In an old cookbook of 19th-century recipes, she found this super simple casserole that turned out to be a hit at the party… and with our family!

3 lbs sweet potatoes (cooked, peeled, & mashed)
1/4 cup brown sugar
3 Tbsp butter
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 cup milk (cream is even better)

Combine ingredients except for 2 Tbsp of the brown sugar. Put into a greased casserole, then sprinkle with remaining brown sugar. Bake at 400° F for approximately 30 minutes.

Yield: 6-10 servings

Time to make: depends on how you cook the sweet potatoes (bake vs. boil) – add 35-40 minutes to that
