Corn Bread

This Hoffman tradition came from Kathy’s “Southern Living” Cookbook.

1½ C cornmeal
2½ C flour
½ C corn oil
1 tsp salt
2 C milk
2 tbsp baking powder
½ C sugar
4 eggs

Preheat oven to 350°F. Mix dry ingredients except sugar and set aside. Beat eggs until foamy. Add sugar, then milk, then oil slowly while still beating. Fold in dry ingredients just until blended. Pour into greased 9×13″ pan and bake for 25-30 minutes. Test with a toothpick for doneness.

Yield: 8-12 servings

Time to make: ~45 minutes
