The recipe is for brisket, but we’ve made this with all sorts of roasts and it works great.
3-5 lb. brisket (remove extra fat)
Glaze
1 jar Apple Jelly (not mint!) jam jar size
1/3 C apple cider vinegar
3 Tbsp Dijon mustard
1 1/2 tsp salt
3/4 tsp pepper
3/4 tsp curry powder
Pre-heat oven to 325 degrees F. Sprinkle beef liberally with garlic salt and pepper. Wrap roast tightly with foil. Cook for 5 hours in oven, on a roasting pan.
Take out, let cool in foil 10 minutes. Meanwhile, combine glaze ingredients in sauce pan. Heat and stir until mixed. Gently open foil packet, slice in 1/2 inch slices, and pour on glaze. Cover back up, return to oven (when you cover meat back up with foil, with glaze poured, the glaze will stay in the foil, so it’s easy to get at it to serve alongside the meat, and it’s easy to clean up!) Bake 30 minutes more at 300 degrees F.
