Italian Meatloaf

1½ lb ground beef
½ C bread crumbs
¼ tsp pepper
1 egg
1 tsp salt
1 8-oz can tomato sauce, divided
1 tsp oregano, divided
1½ C grated mozzarella cheese
¼ C Parmesan cheese

Preheat oven to 350°F.

Combine beef, bread crumbs, pepper, egg, and salt with ½ C tomato sauce and ½ tsp oregano in bowl, mixing well. Pat mix into a rectangle on waxed paper. Sprinkle with the mozzarella cheese.

Roll up like a jelly roll. Pinch along edge and at ends to seal. Place in loaf pan. Mix remaining tomato sauce & oregano together. Spread over loaf, then sprinkle with Parmesan. Bake for 1 hour.

Yields: 6-8 servings

Time to make: 1 hr + 15 minutes
