Kathy received this recipe from Joyce Stanley, her husband’s cousin’s wife. It’s a great standby for a fancy brunch or breakfast-food dinner!
1 bunch green onions, sliced*
½ lb bacon*
6 eggs
1 C + 2 Tbsp Bisquick
3 Tbsp margarine
1 tsp salt
½ tsp pepper
3 C milk
3 C grated cheese
*Mix and match the add-ins based on your favorite quiche flavors – other tasty additions include sausage, chopped spinach, sliced mushrooms, diced peppers, chopped tomato, etc.
Preheat oven to 350°F. Butter 2 pie plates. Cook bacon in a skillet, then remove to paper towels to cool. Break into pieces. Cook onions in bacon drippings, then set aside. Add margarine to skillet and cook mushrooms.
In a medium bowl, beat eggs. Add Bisquick and mix until smooth. Add salt and pepper. Blend for 1 minute, slowly adding milk while mixing.
Spread bacon and half the onions on one pie plate. Spread mushrooms and remaining onions in the other. Divide cheese evenly between them. Pour half of the batter into each pie plate.
Bake for 30 minutes. Allow to cool for 5 minutes, then serve.
Yields: 12-16 servings (fills two pie plates)
