This recipe dates back to the Hoffman Family’s Arizona days. It’s a great way to use up food storage wheat!
1 C dry wheat kernels
½ lb ground beef (optional)
½ medium onion, chopped
1 Tbsp margarine
1 large can tomatoes
2 (8 oz) cans tomato sauce
2 cans kidney beans
1 pkg chili seasoning mix
2-3 beef bullion cubes
Place wheat kernels in sieve and rinse under running water. Drain and transfer to pot. Add bullion cubes and enough water to cover generously. Bring to a boil and simmer for one hour, checking frequently and adding more water as needed (they absorb a lot!).
In a dutch oven, cook beef and onion (or onion in margarine if not using beef). Add wheat and remaining ingredients and simmer at least 30 minutes.
Yields: 8-12 servings
