Meatballs
1½ lb ground beef
1 C cracker crumbs
2 tsp onion flakes
1 egg
1 tsp salt
¼ tsp ginger
¼ C milk
Sauce
3 Tbsp cornstarch
16 oz can pineapple (crushed or tidbits)
½ C brown sugar
¼ C vinegar
1 Tbsp soy sauce
Other
1½ C white rice
Pre-heat oven to 400°F. Mix meatball ingredients and shape into small balls. Bake on a parchment-lined cookie sheet for 40 minutes.
Start rice cooking. Mix cornstarch and sugar in a small bowl, then add the rest of the sauce ingredients. Pour into a dutch oven over medium heat and cook, stirring frequently, until mixture thickens and boils. Add meatballs to sauce and heat through. Serve over rice.
Yields: 6-8 servings

You can also add vegetables to this by stir-frying them in the oil after removing the meatballs.
