This recipe has been passed down from Granny Hoffman (Roger’s Grandmother).
Bars
1 C dried apricots
½ C butter
2 C brown sugar
2 eggs
1 tsp vanilla
1 tsp orange zest
1¾ C flour
1 tsp baking powder
¾ tsp salt
½ C sliced almonds
Glaze
2 tsp soft butter
2 tsp lemon juice
2 tsp orange juice
1 tsp orange zest
1 C sifted powdered sugar
Pre-heat oven to 350°F.
Pour boiling water over apricots, let stand for 5 minutes. Drain and cut into thin strips. Cream butter, sugar, eggs, vanilla, and zest. Sift flour, baking powder, and salt. Blend into creamed mixture. Stir in apricots. Spread evenly in a buttered 10x15x1″ baking pan.
Bake for about 20 minutes, then remove and allow to cool for 10 minutes.
While bars bake, blend together glaze ingredients in a medium bowl. When bars are cool, spread glaze thinly over the top (will work best if glaze is warm) and sprinkle with almonds, pressing them lightly into the glaze. Allow to cool entirely, then cut into bars.
Yields: 4 dozen bars (2½“x1¼”)
