Cheesecake Cupcakes

Required Layers

24 oz cream cheese, softened
3 eggs
1 C sugar
1 tsp vanilla
24 vanilla wafers
topping of choice (i.e., cherry pie filling)

Sour Cream Layer (Optional)

1 C sour cream
2 Tbsp sugar
½ tsp vanilla

Preheat oven to 350°F. Blend cream cheese and 1 cup sugar. Add eggs one at a time, beating between additions. Beat in 1 tsp vanilla. Place paper cupcake cups into muffin tin and place a vanilla wafer in the bottom of each cup. Divide cheese mix evenly among cups. Bake for 10-15 minutes.

Meanwhile, mix sour cream, 2 tablespoons sugar, and ½ tsp vanilla. Spread evenly over cakes, then return to oven for another 5-10 minutes. Spread on topping. Chill and serve.
