Crust
2 C flour
¼ C Turbinado sugar*
2 sticks (1 C) cold butter
Topping
3 eggs
1 stick (½ C) butter, melted
1 C Turbinado sugar*
½ C lemon juice (about 1 lemon)
powdered sugar (optional)
*Turbinado (raw) sugar is similar in appearance to brown sugar but paler, with larger crystals, and in general the two can be exchanged freely in recipes, only insofar as sweetness is concerned.
Preheat oven to 350°F. In a food processor, mix flour and sugar. Cut the cold butter into pieces and process with the flour and sugar until mealy. Press into the bottom of a 9X13 baking pan. Bake 15 minutes. Cool slightly.
While crust cools, combine topping ingredients in food processor and mix for at least 45 seconds. Pour over crust. Bake in oven 25 minutes or until set. Do not brown. Dust with powdered sugar if desired. Cool completely before serving.
Yields: 8-12 servings
