Kathy’s Lemon Bars

Crust

2 C flour
½ C powdered sugar
¾ C butter

Topping

4 eggs
¼ C flour
2 C sugar
1 tsp baking powder
2 lemons

Preheat oven to 300°F. Mix crust ingredients until crumbly. Press into 9×13″ pan, then bake for 15 minutes.

Meanwhile, Beat eggs, then add juice and zest of lemons. Beat dry ingredients in. Pour over hot crust. Bake for 20-25 minutes more. Cut while warm, but don’t remove until cooled.

Yields: 8-12 servings

Time to make: about 45 minutes
