Broccoli

Though there are different ways to cook this popular veggie, this is the favorite at our house.

broccoli (~1/2 lb per person, if you like good-sized portions)
butter
lemon juice
pepper to taste

Put a large pot of water over high heat. Wash and cut up broccoli into bite-sized pieces, keeping the stalks and florets in separate piles or bowls. When water is boiling, add in stalks and cook for 2-3 minutes. Add florets and boil all for another 3 minutes.

Meanwhile, melt a couple of tablespoons of butter and combine with one tablespoon lemon juice (for about one pound of broccoli). As soon as broccoli is done (should be barely fork tender), strain it and return it to the pot. Pour butter & lemon over the broccoli and briefly stir to combine. Add pepper to taste. Quickly lid the pot and give it another minute or two to steam before serving.

Another thing we love to do is to cook the broccoli just this way, but instead of adding butter & lemon, we serve it with the Best Cheese Sauce Ever.
