Danish Æbleskiver

Risi and Ang have very fond memories of this delicious Danish treat – it tastes like a cross between a pancake and a pop-over, with a fruity center. Americans sometimes spell it aebleskiver or ebleskiver.

2 cup buttermilk
2 cup flour
3 eggs, separated
1 tsp baking powder
½ tsp salt
1 tsp soda
2 tbsp sugar
apple sauce or jam

*You will also need an Ebleskiver pan*

Beat egg yolks, then add sugar, salt, and milk. Next, add flour, soda, and baking powder. Fold in stiffly-beaten egg whites. Place small amount of oil in each depression, fill 2/3 full of dough. Place a small tsp apple sauce or jam on top of dough. Then cover with a bit of dough> Cook until bubbly, turn carefully with a fork and finish baking on other side. Remove from pan and sift powdered sugar over them. You can also leave out the filling, and instead top with a fruit syrup.
