16 oz cream cheese
3/4 c sugar
1 Tbsp lemon juice
2 eggs
1 tsp vanilla
~24 Nilla Wafers
cherry pie filling
Pre-heat oven to 375 degrees F.
Place paper muffin cups in each cup of a muffin tin, then put a Nilla Wafer in the bottom of each one. Beat cream cheese, sugar, juice, eggs, and vanilla until fluffy. Spoon mixture into muffin cups over each wafer. Bake for about 20 minutes. Cool, then top with a little cherry pie filling on each.
Yield: ~24 servings
