Pita Bread

1 Tbsp yeast
1 1/4 c water
3 c flour
1 tsp salt

Pre-heat oven to 500 degrees F.

Bloom yeast, then mix all ingredients and knead for 5 minutes, then allow to rest. Knead down and divide into 8 balls of dough. Roll each out flat and bake for 5 minutes on each side, watching carefully to be sure they don’t burn.
