French Bread

1 Tbsp yeast
1 1/2 c warm water
1 tsp sugar
1 1/2 tsp salt
4 c flour

Combine first four ingredients, to let the yeast begin working. Add in flour and mix well. Knead and then allow to rest for 10 minutes 5 times, or simply allow to rise for an hour.

Pre-heat oven to 400 degrees F. Roll into loaves and brush the top with an egg wash. Bake for 25 minutes.

Dough may be used for pizza crust: Roll out thin, add sauce and cheese, then bake (no need to let rise a second time).
