Poppy Seed Cake

Dry

3 c flour
1 1/2 tsp salt
1 1/2 tsp baking powder
2 1/4 c sugar
1 1/2 Tbsp poppy seed

Wet

3 eggs (or 6 egg whites)
1 1/8 c oil (or plain yogurt)
1 1/2 c milk
1 1/2 tsp almond extract
1 1/2 tsp vanilla extract

Glaze

1/4 c orange juice
3/4 c powdered sugar
1/2 tsp vanilla extract
1/2 tsp almond extract

Pre-heat oven to 350 degrees F.

Mix dry ingredients. In a separate bowl, blend wet ingredients. Gently combine all, then pour into loaf pans and bake for one hour.

When cake is almost done, mix and warm glaze ingredients in a saucepan over low heat. Pour glaze over cake straight out of the oven. Cool and serve.
