No-Sugar Oatmeal Cookies

1/2 c butter
1/4 c fructose
1/4 c apple juice concentrate
1/4 c orange juice concentrate
2 eggs
1/4 c raisins
1/2 apple (peeled, cored, & diced)
1 small carrot (peeled & diced)
1 1/4 c flour
1 tsp baking soda
3/4 tsp salt
2 1/2 c quick oatmeal

Pre-heat oven to 350 degrees F.

Cream butter and fructose. Add juice concentrates, eggs, raisins, apple, and carrot and blend in food processor until chopped very fine and blended. Stir in flour, baking soda, salt, and oatmeal, mixing until thoroughly combined. If desired, also stir in 1/2 c nuts, 1/4 c raisins, and/or 1/2 c chocolate chips.

Drop balls of dough on cookie sheet and bake for ~9 minutes.
