Cranberry Apple Cake

2 medium apples (peeled, cored, & diced)
1 1/4 c cranberries
2 eggs
1/2 c oil
1 tsp vanilla
1 c quick oats
1 c sugar
1 2/3 c flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/3 c chopped walnuts

Pre-heat oven to 350 degrees F.

Grind apples, cranberries, eggs, oil, and vanilla with pulses in the food processor until fruit is finely chopped. Combine with other ingredients, stirring all together gently. Pour batter into a greased and floured 9×13″ pan. Bake for about 40 minutes.
