1 can of mandarin oranges (drain, but reserve juice)
1/4 c oil
2 Tbsp vinegar
1 Tbsp parsley
salt & pepper
4 Tbsp sugar
1/2 c sliced almonds
1 green onion, chopped
1 stalk celery, chopped
Whisk juice from mandarin oranges with oil, vinegar, parsley, salt & pepper to taste, and 2 Tbsp of the sugar. Set aside.
Place remaining 2 Tbsp sugar along with sliced almonds in a skillet over med-high heat to brown, stirring frequently. Set aside to cool.
Mix chopped onion, celery, and orange slices. Add sugared almonds. Pour oil & vinegar mixture over the top and stir everything together.
