Fried Shrimp

peeled, de-veined, uncooked shrimp (thawed, if you bought them frozen)
eggs
Panko breadcrumbs
a little salt & pepper to taste
safflower oil
fryer or electric skillet

Bring oil to 375°F in fryer or electric skillet.

Beat eggs in a wide, shallow bowl, adding salt & pepper to taste. Place breadcrumbs in a separate bowl. Dip each shrimp into the egg and then cover completely (except tail) in breadcrumbs. Fry shrimp in batches of 3-5 for just about 2 minutes, flipping half way through, or until golden brown. Place on a draining rack to remove excess oil and serve immediately.

Time to make: 20-30 minutes
