Pasta Carbonarra

A recipe Jim discovered while on his mission.

1 lb spaghetti
4 eggs
¾ cup Parmesan cheese
2 Tbsp parsley
1 tsp olive oil
1 tsp black pepper
2 cloves garlic, minced
½ tsp salt
¼ 1b bacon

Dice bacon and cook until firm, but not crispy; set aside. Whisk eggs, cheese, garlic, spices, and oil together just until smooth. Cook pasta in 1 gallon of boiling, salted water until al dente.

As soon as pasta is done, drain in a colander and then return it immediately to the warm pot. Quickly stir in egg mixture until pasta is evenly coated. Stir in bacon and serve right away.

Yields: 4 servings
