Our family regularly makes the dough for these cookies, rolls it into logs, wraps them, and keeps them in the freezer for quick slicing and baking later. The secret that only the truly initiated know is that the tastiest treat of all is to pull out the frozen log and slice cold, sweet discs of dough and eat them raw!
½ C butter or 1 c shortening
1 C brown sugar
1 C white sugar
2 eggs
1 tsp vanilla
1½ C flour
1 tsp salt
1 tsp baking soda
3 C quick-cooking Oatmeal
1/2 c nuts (optional)
Pre-heat oven to 350°F.
Cream butter with sugars, then gently mix in the rest of the ingredients in a large bowl. Drop spoonfuls onto parchment-lined cookie sheet and bake for 7-10 minutes.
Or, roll raw dough into a log (~1½ inches in diameter). Wrap first in plastic wrap, then in foil. Keep in freezer. When desired, slice 1/2″ rounds from log and place on cookie sheet to bake.
