Kathy Hoffman makes wonderful cheese balls, which are a Hoffman family favorite (especially over General Conference weekend), and she made up this yummy cheese spread (based on the cheese ball recipe) for Jason & Tiffany’s wedding reception.
Cheese Balls
16 oz softened cream cheese
16 oz sharp cheddar cheese
¼ C very finely chopped onion
1 pkg Ranch Dressing seasoning mix
2 tbsp milk
1 C finely chopped pecans
Cheese Spread
16 oz softened cream cheese
1 pkg Ranch Dressing seasoning mix
½ C milk
½ lbs finely grated cheddar cheese
For Cheese Balls: Mix milk & dressing powder. Set aside for five minutes. Beat cream cheese, adding in shredded cheese, onion, & milk/dressing mix. shape into two balls, roll in in nuts, wrap in plastic wrap, and refrigerate.
For Cheese Spread: Mix milk & dressing powder. Set aside for five minutes. Add remaining ingredients and beat with mixer until well-blended and smooth. Scoop mixture into pastry bags with large tip to squeeze onto crackers.
Yields: 2 cheese balls or 3-4 cups cheese spread
