Cooking Oil (optional)
1/2 Onion, chopped
1 Boneless Skinless Chicken Breast, chopped
1 Can Black Beans, undrained
1 Can Whole Kernel Corn, drained
Salt, pepper
Garlic
Oregano
Cumin
Hawaiian Hot Pepper
Sauté the onion in butter in a pan or skillet, then add the chicken. Sauté
until chicken is cooked through. Then add the cans of Beans and Corn.
Add the spices. Use plenty of cumin, but not too much, that stuff is
strong. Put the lid on the pan or skillet and stew it for a few minutes. Stir
occasionally to avoid burning. Take it off the heat.
Serve over rice with cheese.
